Beef and Guinness Casserole over Noodles

Beef and Guiness is a perfect dish for that Sunday afternoon, I found that making this in a slow cooker is a wonderful way to make this tasty dish...This recipe is adapted for a slow cooker. Enjoy!!


2 pounds chuck roast, cut into eight pieces
1 bottle Guinness
2 tablespoons brown sugar
1 teaspoon dry thyme
2 bay leaves
1 tablespoon minced garlic
3 cups onion, large dice
1 pound carrots, peeled and quartered
3 tablespoons butter, softened
3 tablespoons flour
1 teaspoon dry mustard powder
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ teaspoon gravy seasoning, such as Kitchen Bouquet
8 ounces dry egg noodles (we used the dumpling size)


Grease a slow cooker and add the first 8 ingredients and cook on high for 4-6 hours. After about 5 hours remove beef and carrots from the slow cooker to a platter then strain the liquid. Mix butter, flour, mustard powder, salt and pepper in a pan along with liquid and on the stove cook until gravy is thickened, whisking constantly. Return beef, carrots and liquid to the slow cooker and pour gravy over all. Cook on high another hour or so.

Cook noodles according to package directions .

Serve in a family-style bowl over the cooked noodles.
