Mini Cheesecakes

Cheesecakes....what better dessert to top off an Easter dinner? Cheesecakes are not diet friendly of course as a slice of a cheesecake can be upwords of 400+ calories. These little desserts are perfect for having your cake and eating it too! You can top this with fresh fruit of choice or none at all, whatever you like. If you have a big crowd to feed, you can double the recipe. 

Makes 24 mini cheesecakes

1/2 (12 ounce) package vanilla wafers
1 pkg (8 ounce) package cream cheese
6 tablespoons white sugar
1 egg
1/2 teaspoon vanilla extract
1/2  (21 ounce) can cherry pie filling

Preheat oven to 350 degrees F (175 degrees C). Line miniature muffin tins (tassie pans) with miniature paper liners.

Crush the vanilla wafers, and place 1/2 teaspoon of the crushed vanilla wafers into each paper cup.

In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each miniature muffin liner with this mixture, almost to the top.

Bake for 15 minutes. Cool. Top with a teaspoonful of cherry pie filling.
