I have been making Corned Beef for a lot of years now and I found that the simplest way to make it is in a crockpot or slowcooker, doesn't matter which, whatever you have or prefer.
You can get whatever size of brisket you need, place brisket in cooker, fat side up, sprinkle with the spice pack that usually comes with a packaged one. Cover completely with water or beer, whichever you prefer. Let cook all day on high, you can always set the cooker on a lower setting if you wish after at least 4-5 hours. I make my corned beef the day before I want to serve it. Let the cooker cool and place in refrigerator until the next day.
The day of serving, let pan come to room temp, place the pan back in the cooker. You may want to strain the liquid from the cooker and reserve.Take the brisket out and remove whatever fat you want, slice the brisket against the grain, place back in cooker, cover again with the liquid and set cooker on high for at least 2 hours. After that you can set it down to low until time to serve.
You can add whatever veggies, potatoes, carrots and cabbage that you want on the day of serving, just as long as you cook until veggies are done.
