Tropical Quinoa Fruit Salad

I love Quinoa, it may be a required taste for some, but it is packed with so many nutrients. Learn more about this incredible little seed here
INGREDIENTS
  • 1 cup of cooked quinoa
  • 2 kiwis, diced
  • ½ of a pineapple, diced
  • 1 mango, chopped
  • ¼ cup of toasted coconut
  • 1 lime
  • zest of 1 lime
  • 2 tablespoons of honey
INSTRUCTIONS
  1. Cook the quinoa in a sauce pan in 2 cups of water. The quinoa takes about 10-20 minutes to take and it is done once the quinoa has absorbed all the liquid.
  2. While the quinoa is cooking, finely dice all the vegetables. Turn your oven on to broil and toast the coconut until brown.
  3. Make the dressing in a small bowl. Zest the the whole lime and juice the lime. Add in 2 tablespoons of honey and stir well until combined.
  4. After the quinoa has cooled for awhile add in the fruit, toasted coconut and lime dressing. Stir all the ingredients and serve.
NOTES
There are 6 servings and each is a ½ cup. 3 points each.
