My Facebook and author friend, Sandra Byrd, shared this recipe, Cauliflower Salad with her followers on Facebook. Upon research I found that a serving of cauliflower alone has 5 calories whereas a potato has 110 calories and cooked pasta can have up to 221 calories plain. So right there you will save calories and have a healthier dish for that summer picnic. 1 head of cauliflower cooked until tender in bite size pieces.
(microwave 4 minutes, stir, then cook for another 4 minutes)
6 boiled eggs, peeled and cut into small pieces
1/3 cup mayonnaise; don’t use light; it has more carbs
1 ½ tbs mustard; I used dijon
6 - 12 tbs pickle relish (to taste)
1/4 cup raw chopped onion (or more if you prefer)
salt/pepper to taste (you can also sprinkled with dill)
Mix all together and you can garnish with egg slices and
parsley or paprika. Chill for several hours or overnight.
